Semi-Homemade Steph

Posted by Stephanie Harrison on

Holidays  +  many parties and get togethers = a lot of cooking.
I love to cook but sometimes I do not have the time to cook the extravagant meals/appetizers/desserts that I would like to.  I’m a “semi homemade” kinda girl.  I’m always finding ways to make hard recipes easier.  Same taste and half the time and ingredients, that’s a win-win for everyone involved…the cook and the eaters!

We all have those “go to recipes” we bring out when we are asked to bring a dish to a gathering.  During the holiday season, most of the time, I take some sort of appetizer.  I like appetizers better than desserts, so that’s usually my contribution to the food table.

Tonight I am going to share a few of my “go to” recipes and I want you to do the same!  One, I love getting new ideas and two, you can win a gift for sharing your idea!!!  Now this can be anything from your “go to” holiday recipe or “go to” busy weeknight meal.  I will pick my favorites to share on our social media outlets and you will win a “surprise” from me.  AND…if I say “surprise from me”, it’s really from me!

These are very easy to make!  My family loves them and looks forward to the time of year when I break this recipe out.  And they freeze well!!! So you can make ahead which is awesome.  Just put them together just as you would to bake them but instead of baking, freeze on the cookie sheets, and when you're ready to eat or serve them, just toss a few on a baking sheet and bake at 400 until browned on top.

1 lb. Ground Beef
1 lb. Sausage
1 lb. Velveeta (chunked)
1 tsp. Worcestershire Sauce
1 Tbsp. Ketchup
1 Loaf Cocktail Rye Bread (usually around Deli)

  1. Preheat oven to 400F.  Line a baking sheet with parchment paper or aluminum foil.
  2. Cook your beef and sausage. Chop finely.  Drain and return to pan.
  3. Add Velveeta. Melt completely.
  4. Add Worcestershire Sauce and ketchup. Mix in.
  5. Place app. 2 Tbsp of mixture on each slice of rye bread.
  6. Place in a single layer on prepared baking sheet.
  7. Bake 10-15 minutes or until lightly browned and crisp.

Here’s one of my semi-homemade recipes.  I came up with this one day when I didn’t have time to make Frog Eyes.  Since then, I have seen this recipe on other sites, so guess other busy moms discovered this easy recipe too!

16 oz cream cheese, softened
12 oz. deli-sliced ham, chopped
16 oz. baby dill pickles, drained and chopped (sliced and diced)
Optional:  2 tsp of pickle juice (for those that like the extra dill taste)
Frito Scoops and/or Ritz Crackers

  1. In a large bowl, combine all ingredients and mix very well.
  2. Refrigerate for 1 hour before serving.
  3. Serve with Frito Scoops and/or Ritz Crackers
  4. Yum-O!
